Broccoli Cheddar Egg Fried Rice

Fried rice reimagined with cheesy goodness and fiber-rich veggies. A clever twist on fried rice using broccoli, carrot, and melty cheddar for a comforting, protein-rich skillet meal.

What You’ll Need

2 cups cooked rice
2 eggs
1 cup broccoli florets
½ carrot
¼ red onion
¼ cup shredded cheddar
1 tbsp soy sauce
1 tbsp olive oil

Directions

Step 1
Heat olive oil in a pan. Scramble eggs, then remove and set aside.

Step 2
