What You’ll Need
1 cup pearl barley
200g mushrooms
1 medium onion
2 celery stalks
2 garlic cloves
1 tablespoon olive oil
4 cups vegetable broth
1 teaspoon thyme
Salt and pepper to taste

Step 1
Thinly slice mushrooms, onion, and celery using the SLICER blade.
Step 2
Mince garlic by hand.
Step 3
Heat olive oil in a large pot. Sauté onion, celery, and garlic until softened.
Step 4
Add mushrooms and thyme. Cook until mushrooms release moisture and brown.
Step 5
Pour in vegetable broth and barley. Bring to a boil, then simmer covered for 25–30 minutes until barley is tender.
Step 6
Season with salt and pepper before serving.
