1 cup red lentils
1 large carrot
1 small cauliflower head
1 onion
2 garlic cloves
1 tbsp curry powder
1 tsp turmeric
1 can light coconut milk
1 tbsp olive oil

Instructions
Step 1
Heat olive oil in a pot and sauté onion and garlic until fragrant.
Step 2
Add curry powder and turmeric, stirring for 1 minute.
Step 3
Add lentils, grated vegetables, coconut milk, salt, and pepper. Simmer for 25 minutes until lentils are tender.
Step 4
