What You’ll Need

1 can chickpeas, drained and rinsed
½ cucumber, sliced
1 cup cherry tomatoes, sliced
¼ cup parsley, chopped
2 tbsp olive oil
1 tbsp lemon juice
Salt and pepper

Instructions

Step 1
Slice cucumber and tomatoes with slicer; chop parsley with chopper.

Step 2
Combine chickpeas, veggies, and parsley in a bowl.

Step 3
Whisk olive oil, lemon juice, salt, and pepper.

Step 4
Pour dressing over salad and toss well. Pack into containers.
