Instructions
Step 1
Heat olive oil in a large pot over medium heat. Add chicken breasts and cook until golden, about 5 minutes per side. Remove and set aside.
Step 2
In the same pot, add diced sun-dried tomatoes and sliced garlic. Cook for 2 minutes until fragrant.
Step 3
Pour in chicken broth and bring to a simmer. Stir in heavy cream and parmesan cheese.
Step 4
Return chicken to the pot, add baby spinach, cover, and cook for 10 minutes until chicken is cooked through and spinach is wilted.
For Extra Bite!
Add crushed red pepper flakes for heat.
Serve with cauliflower rice for a low-carb option.
