Instructions
Step 1
Heat olive oil in a large pot. Remove sausage from casing and crumble into pot, cook until browned.
Step 2
Add diced onion, sliced garlic, and diced potatoes; cook for 5 minutes.
Step 3
Add chicken broth, white beans, thyme, salt, and pepper. Bring to a simmer.
Step 4
Add chopped kale and cook until kale wilts and potatoes are tender.
For Extra Bite!
Add crushed red pepper flakes.
Serve with crusty bread.
Top with parmesan cheese.
