Instructions
Step 1
In a large pot, heat olive oil over medium heat. Add diced carrot, bell pepper, and sliced garlic; cook until softened.
Step 2
Add vegetable broth, peanut butter, soy sauce, lime juice, and red pepper flakes. Stir well to combine and bring to a simmer.
Step 3
Add rice noodles and cook according to package instructions, stirring occasionally.
Step 4
Remove from heat and stir in sliced green onions and chopped cilantro.
