Slice mushrooms and spinach;
Finely dice the onion.

Ingredients
Eggs 4
Mushrooms 1 cup
Spinach 1½ cups
Onion ¼
Olive oil 1 tablespoon
Salt and pepper to taste
Instructions
Heat olive oil in a pan.
Add sliced mushrooms and diced onion; cook 3–4 minutes.
Add sliced spinach and wilt.
Whisk eggs, pour into the pan and scramble until fluffy.
Season and serve warm.
For extra bite!
Add finely diced tomatoes.
