  • Slice mushrooms and spinach;

  • Finely dice the onion.

Ingredients

  • Eggs 4

  • Mushrooms 1 cup

  • Spinach 1½ cups

  • Onion ¼

  • Olive oil 1 tablespoon

  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a pan.

  2. Add sliced mushrooms and diced onion; cook 3–4 minutes.

  3. Add sliced spinach and wilt.

  4. Whisk eggs, pour into the pan and scramble until fluffy.

  5. Season and serve warm.

For extra bite!
  • Add finely diced tomatoes.
