What You’ll Need

400g lean ground turkey
1 medium zucchini
1 small onion
1 garlic clove
1 egg
1/4 cup whole wheat breadcrumbs
1 tsp dried oregano
Salt and pepper to taste

Instructions

Step 1
Preheat oven to 200°C (400°F). Grate zucchini and squeeze excess water out.

Step 2
In a bowl, combine ground turkey, grated zucchini, diced onion, minced garlic, egg, breadcrumbs, oregano, salt, and pepper.

Step 3
Form mixture into small meatballs and place on a baking tray lined with parchment.

Step 4
Lightly spray with olive oil and bake for 15 minutes or until cooked through.
