4 large flour tortillas
1 cup chopped bell peppers
1 cup chopped onions
1 cup shredded cheddar cheese
1 tbsp olive oil
Salt and pepper to taste

Step 1
Heat olive oil in a skillet over medium heat. Sauté diced onions and bell peppers for 3 minutes.

Step 2
Place one tortilla in the skillet, sprinkle half of the cheese evenly on top.

Step 3

Step 4
Top with remaining cheese and second tortilla.

Step 5
Cook 3-4 minutes on each side until golden brown and cheese melts. Slice and serve.
