Eggs
Tomatoes
Spinach
Onion
Olive oil or butter
Salt and pepper
INSTRUCTIONS
Heat a skillet over medium heat with a small amount of oil or butter.
Add diced onion and cook for 2–3 minutes until softened.
Add diced tomatoes and cook for 1–2 minutes.
Add sliced spinach and stir until just wilted.
Whisk eggs lightly, season, and pour into the pan.
